He works only with traditional varietals, here Mencia and Alicante Bouschet
If you love Pinot Noir or Cabernet Franc, Mencia is a varietal worth investigating, medium bodied and savory, with floral and red fruit components
Perez makes wine in a non-interventionist manner, using native yeast fermentation and allowing the character of the grapes to come through
